Gino was born in Chiclayo, Peru. He was raised by his mother, Elsa. Gino is one of seven kids. Growing up in Peru, Gino's mom owned a restaurant called Dos Y Uno.
It was at the family restaurant where Gino would spend most of his spare time helping his mother. Gino could barely talk, yet he was squeezing the juice out of a plum tomato for his mom's sauce. His mom's specialty was seafood and shell food stews. Gino worked in the Dos Y Uno until he was 18.
Gino's father sent for him to come to the United States. He was very grateful to have this opportunity.
His first job was in Burien at Filiberto's in Burien, where he learned to make salads, antipastos, pizza, and basic Italian food.
Gino would go to school during the day and work hard in the evenings. Gino learned to speak fluent English and got a job at Portobello's as the Sous Chef. It was there that Gino was able to demonstrate some of the skills he learned in Peru. Rossetta, the owner, took Gino under her wing and taught him Customer service, recipes. desserts, accounting, and management skills.
Gino worked under various chefs in the area. He worked in the new Jake O'Shaughnessy's and the McHughes Corporation. Gino was the executive chef at Giancarlo's, Verrazano's, and A's Pasta.
Gino married his wife, Kelly, In 1998. He has four beautiful children that are often heard at "Daddy's Bistro."
An opportunity came to Gino's attention in April of 2002. A restaurant that had a special meaning to him. . . The old Giancarlo's was up for sale. The opportunity to go back to the old neighborhood and make it into the best restaurant around was the ultimate goal.
Gino and Kelly worked side by side to remodel, decorate, and create Gino's Bistro, and now Gino’s at Port Orchard.
